Olive Garden doesn’t want to spend more than they have to on staffing costs. In 2011, Darden implemented a new rule that required front-of-house staff, like servers, to share some of their tips with the traditionally un-tipped team, like bartenders and bussers.

From certain angles, this can look like an effort to ensure all staff gets equal treatment. At least, Darden tried to market it seems like that. But the truth is VERY different. Let’s break t down. Employees who don’t ordinarily receive tips get paid at least minimum wage.

But people like waiters and waitresses who receive them can be paid much less because their tips should technically make up the difference.

By officially instructing the tipped staff to share, the company can legally cut the wages of bussers and bartenders below minimum wage and save a ton of money.

This virtually amounts to Olive Garden cutting wages and letting the customers’ tips spread even further. Darden’s wage bill might drop. But if you ask us, its karma bill is in the red and long overdue for payment!
