Without enough vitamin B12 or iron, the body is unable to produce enough hemoglobin, a specific type of protein that’s essential to the functioning of red blood cells. This protein, which is packed with iron and gives blood its red color, allows oxygen to bind up to the cells so they can transport it to the tissues that need it.
